In addition to producing top quality smoked fish products Boucanerie Chelsea Smokehouse aims to celebrate, embrace and add momentum to the increasingly popular trend in eating healthier, regional foods with the lowest possible carbon footprint. By maintaining the highest standards of quality and hygiene in our production process and, through our specialty boutique, drawing attention to regional artisans we hope to provide our customers with a wide range of the finest, most ethically produced foods available in the region.  We intend to revolve our business around the philosophies of environmentally responsible food production, packaging, transportation, sale and consumption.

At  Boucanerie Chelsea Smokehouse we aim to uphold the highest standards of environmental practices by only selling ethically produced, fairly traded products.  Reducing waste and energy use, recycling, especially take-home food containers, and providing a focal point for fair trade and environmental organizations, such as the Atlantic Salmon Federation, will be our top priority trading policies.
